Made my favorite waffle recipe of all time for dinner last night. And at the request of one irresistible little boy, we even whipped some of "that yummy cream my granga (aka Grandma) has." My mom tore it out of a magazine once upon a time. And since I have no way of tracking that scrap of paper to its rightful curator, my mom gets all the credit for this amazing recipe. Knowing how much I love them and being the sweetest woman in the world, she makes these for us almost every time we visit. Thanks, Mama! The ingredients that steal the show: sweet potatoes, cardamom and pecans. Heavenly.
Sweet Potato Waffles
1 1/2 cups flour
1 T sugar
1 tsp cardamom powder
1/2 tsp salt
1 1/2 tsp baking powder
3 eggs, separated
1 cup sour cream
1 cup cold, mashed sweet potato
1/2 cup milk
1/4 cup butter, melted
3/4 cup chopped pecans
In large bowl, combine flour, sugar, cardamom, salt and baking powder. In another bowl, whisk the egg yolks, sour cream, sweet potatoes, milk and butter. Combine with dry ingredients and stir until just moist.
Fold in pecans.
In a small bowl, beat egg whites until stiff peaks form. Fold into the batter. Bake in preheated waffle iron until golden brown. Makes about 10 waffles.
